Hemen her hafta yapmaya calısırım. Bizim İzmir pazarlarında ayıklanmısını da hemen hemen aynı fiyata satarlar.. O yuzden sanslıyız .. Gelelelim tarifine. Bizimkiler yemek yerken pek ellerini kirletmek istemezler. Onun icin ben sadece enginarın canagından , zeytinyaglısını yapıyorum .&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="color: white;"&gt;&lt;strong&gt;Ayıklanısı&lt;/strong&gt;&lt;/span&gt;&lt;strong&gt;1. Once 1 limon suyu+ 2 bardak su + 1 yemek kasıgı un derin bir kapta hazır bekletilir&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;2. Enginarın &lt;/strong&gt;&lt;strong&gt;sapı canaga yakın bir yerden 1-2 cm. kala kesilir. Dıs yaprakları kopararak ayıklandıktan sonra, enginar enlemesine kesilerek yapraklardan tamamiyle kurtulunur.Dıs yuvarlak tarafı keskin bir bıcak yardımıyla duzeltilir. Bu sırada sarı kısımdan cok fazla kesilmemeye dikkat edilir.&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;3. Sonrada sekilli kurabiye kalıpları ile hamurum bitinceye dek kestim.Yaglı kagıt serilmis tepside 180 derecede yarım saat kadar pisirdim.&lt;br /&gt;  Arkadaslarımda cok begendi. Ceviz buyuklugunde parcalar halinde yaglanmıs tepside , orta hararetli fırında uzun surede pisirilir(iclerinin bosalması icin)&lt;br /&gt;&lt;br /&gt;İclerine krema pompası yardımıyla krema doldurulur. Güveç dediğime bakmayın. Gördüğünüz gibi toprak bir kap ama yayvan ve de sırsız . Bilim adamları tamamen doğal olması gerektiğini saptamışlar bu kapların. Bir de böyle toprak kaplarda deneyin.Gerçekten çok lezzetli oluyor.&lt;br /&gt;   Bu yemeği yaparken kusbası dogranmıs tavuk budu kullandım.  Etleri bir dis sarımsak. kucuk dogranmıs kırmızı biber, bir tatlı kasıgı yogurt, kekik, 2 yemek kasıgı domates püresi ile marine ettikten sonra hic yag koymadan pisirdim. Ben pazarda buldum, ama sonra marketlerin dogal urunler satan reyonlarında da varmıs dediler..Rengine bayıldım.. Suda biraz beklettikten sonra 10 dk. kadar haslıyorum. Zeytinyagı,limon ve sarımsak ilavesiyle nefis bir salata yada meze oluyor... &lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;Baska bir kullanım sekli de , kurufasulye ,nohut gibi baklagillerden yaptıgımız yemeklerle birlikte pisirmek. Cok yakıstıgını dusunuyorum. Torununu ozlemis,gelmis.. Napalım pabucumuz coktaaan dama atıldı.. Neyse, bizde fırsatı kacırmayalım, anneme bir borek yaptıralım dedik. Alt ust boregi dedigime bakmayın, aslında bu bir tatar boregi. Saglıklı beslenmek icin zeytini taa Bursa'ya gidip getirmesi ondan, sofra zeytini haline getirmesi esimin annesinden, yemesi de hepimizden ..Fakat biz tuketemeden yeni zeytinler gelince bende gecen seneden kalan biraz yumusamıs zeytinleri cekirdeklerini cıkarıp,zeytin ezmesi haline getiriverdim. Bu arada aksama ne yesek diye dusunurken mantarlı zeytin fikri gerceklesti..&lt;br /&gt;Mantarların saplarını cıkarıp yıkadım.Biraz tereyagında 2-3 dk. kadar kavurdum. Sonra yarı pismis haldeki mantarların icine cay kasıgı yardımı ile zeytinleri doldurdum.Uzerlerine kasar peyniri rendesi serpistirip fırında 15-dk.kadar daha pisirdim. İsterseniz deneyin..Arpa sehriye pilavı ile de yakıstı dogrusu.. Degisiklik olsun istedim. Biz begendik,bakalım siz de begenecekmisiniz?&lt;/span&gt;&lt;/em&gt;&lt;/strong&gt;&lt;strong&gt;&lt;em&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;&lt;br /&gt;Malzemeler&lt;br /&gt;. 1 ad yufka&lt;br /&gt;. 2 ad yumurta&lt;br /&gt;. 1/2 paket makarna&lt;br /&gt;. 1,5 bardak sut&lt;br /&gt;. 2 kasık un&lt;br /&gt;. 2 kasık sıvı yag&lt;br /&gt;. 300 gr. beyaz peynir(rendelenmis)&lt;br /&gt;. 1 bardak rende kasar&lt;br /&gt;. maydanoz,karabiber ve sucuk dilimleri&lt;/span&gt;&lt;/em&gt;&lt;/strong&gt;&lt;span style="color: rgb(255, 255, 255);"&gt;&lt;strong&gt;&lt;em&gt;&lt;br /&gt;Yapılısı&lt;br /&gt;1-Makarnaları tuzlu suda 5 dk pisirelim.&lt;/em&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;2- Beyaz peynir,sucukları, maydanoz ve karabiberi ilave edelim.&lt;/em&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;3-sut , un, ve yumurtaları karıstıralım. 2 kasık kadarını ayıralım.&lt;/em&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;4-Fırın kabımızın dibini sıvı yagla yaglayalım. Yufkayı yarısı dısarıda kalacak sekilde serelim.Makarnalı karısımı yerlestirelim.En uste kasar peynirlerini serpistirelim.Dısarıda kalan yufkayıda uzerine kapatalım.&lt;/em&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;5- Ayırdıgımız sutlu yumurtayı surelim. Ben kesme isini pisirmeden once yapmayı tercih edi yorum. Once Soke unun koy ekmegini denedim.Bu denememde bloglardaki onerileri dikkate aldım. Sonuclar super oldu. O kadar super olduki resmini cekip sizlerle paylasmaya fırsat kalmadan yenilip bitiverdi.&lt;br /&gt;Resmini gordugunuz ekmek ise Soke un koy ekmegi ile Pınar unun yarıyarıya karısımından yapıldı.Ben ekmeklerimi elektrikli fırınnda elips bir borcamda pisirdim. Onun icin yarım kilo una 3 bardak sıcak su ve tabiki mayayıda ilave ederek hazırladım hamuru..Pisirme suresi ise 45 dk. . Sarıkamıs'ta gorev yaptıgım yıllardamaydanoza bile hasret kaldıgımdan beridir,sararmıs maydanozları bileatmaya kıyamam...Sonunda atıyorum tabii..Evet bugun ısırgan otlu cıplak pide yapmaya karar verdim. Isırgan otunun da &lt;a href="/http://www.geocities.com/sifali_bitki/sifali_bitkiler_ia.htm"&gt;sifalı bitkilerden &lt;/a&gt;oldugunu biliriz. Hem cok lezzetlidir, hemde cabukpiser. Ama ayıklaması biraz zaman alıyor... Ne yapalım ,bu da onun kusuru..&lt;br /&gt;Malzemeler&lt;/em&gt;&lt;br /&gt;&lt;em&gt;1 bag ısırgan otu&lt;/em&gt;&lt;br /&gt;&lt;em&gt;1 ince pırasa&lt;/em&gt;&lt;br /&gt;&lt;em&gt;1 kucuk sogan&lt;/em&gt;&lt;br /&gt;&lt;em&gt;1 su bardagı un &lt;/em&gt;&lt;br /&gt;&lt;em&gt;2 yumurta &lt;/em&gt;&lt;br /&gt;&lt;em&gt;tuz &lt;/em&gt;&lt;br /&gt;&lt;em&gt;Yapılısı &lt;/em&gt;&lt;br /&gt;&lt;em&gt;.Isırgan otunun yapraklarını ayıklayıp,yıkayalım&lt;/em&gt;&lt;/strong&gt;&lt;/span&gt;&lt;span style="font-family:arial;"&gt;&lt;strong&gt;&lt;br /&gt;&lt;em&gt;.Bir suzgeçte suzulmeye bırakalım.&lt;/em&gt;&lt;br /&gt;&lt;em&gt;.Pırasa ve soganı ince ince dograyalım,buyukce bir teflon tavada, az yagda 1-2 dakika cevirelim . &lt;/em&gt;&lt;br /&gt;&lt;em&gt;.Derin bir kasede ısırgan otu,un, tuz ve yumurtayı tahta bir kasıkla harmanlayalım. Soganları da bu karısımın icine ilave edelim. &lt;/em&gt;&lt;br /&gt;&lt;em&gt;.Tavamıza dibini kaplayacak kadar sıvı yag koyalım.Yag ısınınca karısımı tahta kasıgın tersiyle tavanın her tarafına esit miktarda yayalım.Tavanın kapagını da kapatıp 3-4 dk. pişmeye bırakalım. Altı hafif kızarınca omlet gibi ters cevirerek diger tarafında kızarmasını saglayalım. Sıcak ve yogurtla servis yapalım.
